Re upholstering seats

Hello all, my question pertains to interior of a recent barn find.  A 1963 cadillac sedan with 16000 original miles.  Unfortunately it had mice in the car, so of course the whole interior which is complete needs to come out. When taking interuor door panels and seats to an interior shop would you strip the seats down or let the shop tear and rebuild them?  The seats just stink.PaulSee More
