If you've already dropped the engine in the car, why not just jack up the sagging side to the same height as the non-sagging passenger side and see if you like the height. Jamco sells lowering coils if it sits too high.
Going with 2" drop springs in the front. Should yield me 1" lower than stock ride height hopefully. Match the rears after the fronts are installed.
Radial tires will drop the car another inch if you use them so consider that in your ride height
